It's super simple. Boil 1 pound of bow tie pasta (use whole wheat pasta if you want it to be a little healthier). While the pasta is cooking, cut 1 pint of cherry or grape tomatoes in half. Cube 8 ounces of mozzarella cheese. Gently warm 1 cup of pesto. If you have a favorite pesto recipe you can make your own, you can buy the pesto pre-made, or you can use a packet of dry pesto mix (like Knorr's) and just add water and oil. When the pasta is done, drain and mix everything together. And voila!

Oh, that looks yummy. Do you have a hard time getting your hubs to eat these things? My man is such a MEAT man that he'd throw a bit of a fit! HA!
Yeah, my hubby is a big meat man too. As long as I only do things like this like once a week, he's usually fine with it though!
